Fine organic ice cream from Lake Constance and Black Forest ham
Those who love Swabian cuisine and Baden wines can feast their way through the classics in Hall 5.2. What else Baden-Württemberg has brought to Grüne Woche.
There is a savoury aroma in the air. There are Maultaschen. But ‘the kind you've definitely never eaten before’, promises the information board at ‘I love Mauldasch’. ‘We have brought the Maultaschen in an innovative way to show what the Maultasche can do,’ says Benedikt Wächter. The catering company from Winnenden, north of Stuttgart, normally tours Baden-Württemberg and Germany with its food truck. For Grüne Woche, ‘I love Mauldasch’ has created three dishes: ‘Mauldasch meets USA’ with chilli cheese sauce, jalapeño, red onions and fresh tomatoes. ‘Mauldasch meets Italy’ with pesto, tomatoes and hard cheese. And ‘Mauldasch meets Germany’ with curry sauce and mango chutney as a friendly tribute to the Berlin currywurst. The Maultaschen are available in classic (with beef and pork filling) or vegetarian (spinach and ricotta) versions.
Gourmet ice cream with matcha
Right next door, ‘Yammi’ offers the finest organic ice cream from Lake Constance. Only selected ingredients are used in the ice cream, where possible from regional suppliers, as co-owner and managing director Frank Burkert explains: ‘People always say we're crazy when it comes to raspberries because we only get them from Germany’. The chocolate comes from premium manufacturer Original Beans, the vanilla from a family business in Madagascar and the raw milk from a neighbouring farm. ‘Yammi’ pasteurises the milk itself and only once, “because we want to keep the ingredients as high quality as possible,” says Burkert. At Grüne Woche, the manufactory will be selling seven classic flavours plus its own specially created matcha ice cream.
Anyone looking for inspiration for their own kitchen can click through the ‘recipe generator’ at the Baden-Württemberg Ministry of Agriculture stand opposite and get ideas for imaginative snacks. Sweet or savoury? With or without meat? Fruit or milk? You can choose point by point and receive a suggestion at the end. For example, vegetable riblets with tomatoes, cucumber and Allgäu cheese.
Sweet potatoes from Reichenau
Also inspiring: the stand on the island of Reichenau on Lake Constance, where countrywoman Marga Merkle explains everything about the sweet potato, which has been cultivated on the island for several years. For example, that unlike potatoes, sweet potatoes can be eaten raw because they are not potatoes, but a bindweed. Of course, there are a few slices ready to try.
A few steps further on, ‘Der Schwarzwälder’ freshly slices Black Forest ham and offers sausage snacks to try. The butcher's shop from the Glottertal valley keeps its animals in a species-appropriate manner and pays attention to short transport routes. At Grüne Woche, the company is offering a Black Forest gourmet bag with eight specialities, including Kleine Wilde, Kleine Feuerteufel and Kleine Büffel sausages.
